When people talk about food, Chinese food always comes up in their mind. Chinese food is famous because of its complex cooking tech. Different with other food in the world, Chinese food stress on every single detail. Seasoner like monosodium glutamate, salt, sugar and cooking wine are really important in Chinese food. They supplement each other to create a delicious Chinese dish. Dumpling, in Chinese called “Jiao Zi”, is a really famous Chinese food. It is not famous for its complex construction, but its special meaning. Dumpling’s surface is plain and simple , but its internals are rich and colorful.
· Chinese people like to eat dumpling during the spring festival. Dumpling represent reunion in the family. All the family member come together and have dumpling as their dinner, that it the thing Chinese do every year.
· At early time, most of the dumplings are home-made. First, people will prepare for their stuffing. The stuffing of the dumpling is usually pork and one kind of vegetable. As I know, people like to put one of green vegetable, Chinese cabbage, Chinese chives or celery in the dumplings. Different kind of dumpling has its own advantage. People cut up the vegetable and pork and then mix them together. They also put some salt and monosodium glutamate and cooking wine in to make the dumpling become more tasty. Then they buy the wrappers back. Wrappers are made by flour, salt and eggs. Dumplings taste good or not are mostly depend on their wrappers. Good wrapper can change the whole flavor of the dumplings.
· Dumplings are really easy to cook. When you go to the Chinese supermarket, you can see a lot of kinds of quick-freezing dumplings. The only thing you need to do is boiling. You even do not need to stir them because it will stave their wrappers. Add a bowl of cold water after a while then boil them until they float up. Then a plate of delicious dumplings are finished. Another way to cooking dumplings is frying. It is more easier to cook and it has its own taste different from boiling. They wrapper are harder and I think frying is more suitable for American.
· Because of the white wrappers, dumplings look very normal. They are easy to make and easy to cook. Dumplings sounds very simple and actually they are compare with other Chinese food. After one bite, you can see the green and white stuffing inside. Because the cooking method is boiling so there will be some liquor stay inside. These colors will attract people to eat them.
· They taste of dumpling can be called succulence and delicious. We can taste the original taste and flavor of the food material. It is unusual for Chinese people because they are used to have the dishes with a lot of condiment. The wrappers are slightly chewy and it make the dumplings become more delicious. Chinese people like to eat dumpling with vinegar. When people make wrappers, they will add some yeast inside and the yeast are base. Vinegar is acid and it can neutralize the base in the wrapper perfectly and make its mouthfeel become better.
· When you smell the dumplings from the outside, you may not achieve your wish. The wrappers wrap up all the tasty stuffing inside it. The only thing you can smell is the smell of flour. They stuffing smell not that delicious either. Dumplings aren’t like other Chinese food, all the delicacy are locked inside the stuffing.
· Dumpling has a special meaning and it is always important in Chinese people’s heart. More and more colorful Chinese come out but the simple dumpling always has its special status in Chinese food. It is not because its taste or smell, but a traditional Chinese culture. When people mention about dumplings, they always have a warm feeling come up their mind. When the whole families sit around the table, enjoy dumplings together, Chinese people can find the feeling of new year. Dumplings was simple, but they are indispensable in Chinese people’s lives.
